We had leftovers last night so tonight is the chicken nuggets.  I'm thinking skinny chicken nuggets.  Rice and a veggie and probably tator tots, because the world will come to an end if we don't have a potato with our meat! :)

Well, DD's second softball game of the week just cancelled.   Too cold.   There were snow flurries earlier today.   The kids will both stay at their dad's house tonight and Jeff and I have a night out.   Again.   I offered to cook.   He said no, he'd rather go out.   No need to ask me twice.

Well I was going to make myself a salad and then head out to a Zumba class but John called and he is on his way home - so much for the diet and exercise but I'll take it!

We went to a new non-chain place in a neighboring county.   I got a grilled chicken dish, rice, salad, and some veggie mix.  And rolls.   I ate the rolls.   I did well today though.   I have been walking a ton at work and trying not to use that exercise on My Fitness Pal to meet my calorie goal.   I was under my goal today without adding in those walks (1 mile twice a day).

I had a concert tonight, and with Erick in Reno for his conference, it was a quick turn around for me - scrambled eggs and toast. Tristan made mac and cheese and chicken nuggets for himself and Riley.

I made the skinny chicken nuggets a slighty different way because it was getting late and I needed to hurry the heck up...BUT, I liked it better, less mess, and I will probably do it that way from now on! 

After I cut them apart, I tossed them in olive oil and then threw them in a ziploc bag with the bread crumbs and shook it.  It was a lot less messy under the finger nails, that's for sure!  They went over well again and Natalie looked shocked when I said they were MUCH healthier than the "other kind".

I had another boring turkey sandwich.... but it was tasty. I ran some errands after work with Amber (actually I sat in the car with the kids so she didn't have to drag them both in to all the places she had to go) and my hubby couldn't wait for me to get home so he got himself tacos from Taco Bell. Susan, your family sounds like mine... I made macaroni & cheese once for a side (instead of potatoes) and my hubby says, "Where's the potato?" I told him, no potato needed, the mac & cheese was the starch and he told me that mac & cheese do not take the place of a potato! LOL
