4 pounds yams
1 tablespoon honey
Juice and grated rind of 2 oranges
1 tablespoon butter
Salt, pepper, and nutmeg to taste
Cover yams with water and boil until tender; drain. Drop into cold water; slip off skins. Mash. Blend in remaining ingredients. Spoon into buttered casserole dish. Bake at 325 degrees. for 40 minutes or until golden.
