Roasted Cumin & ChickPea Salad

Makes a great summer side dish to any meal. Enjoy!

1 oz feta cheese, crumbled
1 tomato, seeded, chopped
15 oz can chickpeas or garbanzo beans, rinsed
2 tbs lime juice
3/4 tsp cumin
1/2 onion, finely chopped
1 stalk celery, thinly sliced
Salt and Pepper
2 tbs olive or vegetable oil

Heat a skillet. Add cumin and cook until toasted and fragrant, 1 min. transfer to a bowl. Add oil, lime juice and 1/4 tsp each salt and pepper to bowl and whisk to combine. Add chickpeas, celery, tomato and onion and toss to combine. Let sit 15 min. Fold in cheese just before serving.
