Red Pepper Frittata

I got this recipe from my health care insurer.

Red Pepper Frittata

A fritta is like an open-faced omelet that is cooked on the top of the stove.


  • 2 tsp olive oil, divided
  • 1/2 cup chopped celery
  • 2 cloves of garlic, minced
  • 1/2 tsp dried oregano
  • 1 tbsp Parmesan Cheese
  • 1 tbsp chopped fresh parsley
  • 2 cups egg substitute
  • 2 red bell peppers, chopped
  • 1/2 cup onion
  • Directions:
  1. 1. Warm 1 tsp oil in large, ovenproof frying pan over med ium heat. Add red bell pepper, celery, onions and garlic. Cook stirring frequently, for 4-5 minutes or until tender. Remove from heat and set aside.
  2. 2. In a large bowl, lightly mix egg substitute, parsley, oregano and blck pepper. Stir in the vegetable mixture.
  3. 3. In the same fying pan over medium heatm wamr the 1 tsp remaining oil. Add the egg mixture to the pan. Cook until brown around the edges.
  4. 4. Cover the pain and reduce heat to low. Cook for 3-4 minutes or until the eggs are set.
  5. 5. Meanwhile preheat the broiler. Sprinkle the frittata with the cheese. Place pan about 5 inches from heat. Broil for 1-2 minutes or until golden brown. Cut into wedges.
