Good carbs-bad carbs?

I don't have diabetes but am trying to become more aware of what I am eating because I do have several family members with diabetes. I know they are supposed to be changing their diets but they don't appear to have changed anything to me. I want to try to be pro-active with this so can someone explain the good carb-bad carb to me. Also, is there a book(s) that would help explain diabetes to me.

Hi Mary,

Welcome to the diabetes board. Generally the diabetes meal plan has been liberalized so that we diabetics can eat almost anything. What has changed the most is the amount that we can eat of something. That being said it is recommended for diabetics to eat whole grains and fruits and things with increased fiber in them. We do have a saying in diabetes that if its white don't bite. This means don't eat white flour, white rice, white sugar and white potatoes. This is because these foods raise your blood sugar very quickly and they have little fiber attached to them.
