Are purple potatoes legal?

Well, I'm guessing it's of the illegal red/new potato type b/c that's exactly what it tasted like.

Hi Cammy,
You're right. The same carb/GI count as a white potato.
The blue in blue potatoes comes from their flavonoid content.
The presence of carotenoids and flavonoids, however, does not affect the carbohydrate content of potatoes. Potatoes all contain about one gram of carbohydrate for every four calories—they're basically all-carbohydrate when it comes to calorie content.

Sweet potatoes are legal because of their low glycemic index. A sweet potato has a GI of 39 and a white potato 52.

So does their fibrousness lower the GI?  Just trying to understand the science of it all.  (My brain likes to ponder the picky details that probably don't even matter in the grand scheme of things.)

White potatoes and sweet potatoes have the same fiber content per ounce. Just how our bodies process the starchiness of a white potato makes the GI higher.
