Welcome Kristin! I thought I'd share what I do because I have run into a similar issue cooking for my husband and guests. I try to plan meals that I know I can adapt for myself. For example- tacos are pretty family friendly- and if you use lean beef, reduced fat cheese, and tons of veggie toppings and load it into a huge lettuce wrap- you've got a SBD taco. I serve mine with cornbread for those eating carbs, and spicy grilled squash for myself. Lettuce wraps really helped me get through phase 1. I usually make turkey or tunafish sandwiches for myself and my husband for lunch- so I could still by all the same ingredients and just put my sandwich in a wrap (add rf cheese or avocado for more great flavor). If make a stir fry and serve it with rice, you can eat yours in lettuce wrap (this was a great recipe for me- just have to sub. the sugar and rice vinegar: http://shewearsmanyhats.com/2009/09/chicken-cashew-lettuce-wraps/).
