Eggnog Cookies

Makes about 4 1/2 dozen

If you'd rather make these into sandwich cookies, frost the bottoms instead of the tops and match them together. You may have a little extra icing this way.
•The cookies
•2 1/2 cups all-purpose flour
•1 1/2 teaspoons baking powder
• 3/4 teaspoon kosher salt
• 3/4 teaspoon cinnamon
• 1/2 teaspoon nutmeg + more for sprinkling over the top
•8 ounces unsalted butter, at room temperature
•1 1/4 cups sugar
•2 egg yolks
• 1/2 cup prepared eggnog
•1 teaspoon vanilla extract
•1 tablespoon rum
•The icing
•4 ounces unsalted butter, at room temperature
•4 ounces cream cheese, softened
•2 cups powdered sugar
•1 1/2 tablespoons rum
•1 teaspoon lemon juice
•-- Dash kosher salt
•-- Fresh nutmeg for grating, if desired

Instructions: Preheat the oven to 350°. Sift together the flour, baking powder, salt, cinnamon and nutmeg; set aside.

In the bowl of an electric mixer fitted with the paddle attachment, beat the butter and sugar together until light and fluffy, about 2 minutes. Add egg yolks, one at a time, beating after each addition. Add the eggnog, vanilla and rum; beat until combined - it's OK if the mixture looks a little lumpy. Slowly add the flour mixture, beating on low until just combined.

Drop by rounded tablespoons onto silpat- or parchment-lined baking sheets, about 2 inches apart. Bake until light golden on the bottoms, about 10-12 minutes. Transfer to a cooling rack until ready to frost.

Meanwhile, make the icing. In the bowl of an electric mixer fitted with a paddle attachment, beat the butter and cream cheese together until well combined. Add the powdered sugar, and beat slowly until incorporated. Add rum, lemon juice and a dash of salt; beat on medium-high until the icing looks fluffy and spreadable.

Top each cookie with about 1 1/2 teaspoons of the icing. If desired, grate a little bit of fresh nutmeg over the top.

dyk I actually though of jennie during the presentation (and not just because I kept talking about sexual harassment)

dyk it was at the theater at Pier 39 in San francisco, an area I recall she and Sean really enjoyed when they were visiting

dyk I could not get over how close Alcatraz was --- I wouldn't want to swim out to it --- haha but I can see how prisoners thought they could swim in! haha

dyk the seals were pretty cool too

dyk I sent it to her and we were in MSN and she said, "I like that fish. Like... I really like the fish."

dyk then, "Can I have it?"

dyk I am making two -- so I told her she could indeed have one.

dyk little Carys' dad is very into carpentry and woodwork as his hobbies
dyk so I was thinking about getting her the Fisher Price Workbench as one gift, and then something smaller for the other
dyk but I have no idea what babies like!
