I am off today, which is nice. I'm doing a strength training workout this morning and I'm actually excited about it. :) It's been so long. I have a doctor appointment this afternoon. We're heading to our Zoolights tonight - a friend of ours built a big giant praying mantis that went to BM and it was picked to be at Zoolights so a huge group of people are going with her tonight. Should be fun. Breakfast: oatmeal Snack: protein shake Lunch: sushi Dinner: probably skip dinner since lunch will be late and I plan to eat a lot. :)

OH nice-I love a good strength workout. I hope you feel great afterwards. I don't have any real plans today. When I get done working I am going to hit the treadmill for a few miles. Then I need to do some reviewing for finals that are coming up next week. I've done all the classwork for each class and now just need to get ready for finals.

Pizza casserole with salad for dinner. mmmmmmmm

Happy national cookie day!  I just made double chocolate chip cookies and can smell them now.  It's absolutely beautiful out today, about 70 degrees. I wasn't up for running so my friends and I went for a walk, about 4 miles hilly.  It's really nice to be able to do something spontaneous like that since I'm off today. I was thinking I should think about cutting back on work so I have more time to do things like this. I finished decorating outside, more as an excuse to be out in the warmth.

Pizza casserole? Share the recipe? It sounds decadent.

We absolutely love it and you can add any ingredients you want. It is basically like this:

uncooked egg noodles (I use Ziti or Penne pasta noodles)

lean ground beef

1 onion, chopped

cloves garlic, minced

green bell pepper, chopped

sliced pepperoni sausage

16 ounces pizza sauce (more or less to taste, I use three jars)

shredded mozzarella cheese

Directions

Cook noodles according to package directions.

In a medium skillet over medium-high heat, brown the ground beef with the onion, garlic and green bell pepper. Drain excess fat. Stir in the noodles, pepperoni, pizza sauce and mix well. Pour this mixture into a casserole dish.

Bake at 350 for 20 minutes, top with the cheese, then bake for 5 to 10 more minutes.

Day 2 of snowing in Krakow...not a lot, but definitely snow...I went to Zuma tonight.  It was pretty good...high energy young girls...plus me...I did marginally ok except one move where they did pushups while circlinaground...I stoos, jogged, and laughed.  I am not good at Zumba, I just like it...and there is a different locker room for classes than for the workout area and pool...

Perserverance! I love that you keep plugging in, even w/ all the technical difficulties. You know, for a few years, you'd pop in occasionally, post words of wisdom and disappear. I always wished you'd hang around because you have so much to add.  So glad you decided to join us regularly!
