Baked potatoes as a meal?

I used to make baked potatoes with a variety of toppings as a meal a long time ago but actually forgot about it until I saw this article today http://www.ivillage.com/baked-potato-recipes/3-b-494814 I am thinking about running out to grab a few items and have baked potatoes tomorrow night (have roast in crock pot for tonight). 

Just curious if you eat baked potatoes and what kind of toppings you've tried on them.

Bacon, green onions, sour cream/fate, hvegg grilled veggies, the kitchen sink...leftovers...I LOVE baked potatoes, but be aware that they are like any starchy carb like white bread and rice, which I generally don't eat unless it is late in the day.  The sugar overload makes me tired, so I am useless afterwords.

Funny that you post this because I realized the other day that I have never made baked potatoes for my kids.  Baking potatoes are so large these days that I'm thinking one should easily feed three, especially if you have a meat entree and vegetables. I need to do it--what an easy meal it could be, too!  As fsn says, they're really starchy so they wouldn't be the meal itself.

I love baked potatoes but don't eat them very often. We have them as the entree occasionally, I used to call it "baked potato bar". I brown some ground turkey with onions and spices as the main filling, and also offer plain NF greek yogurt in place of sour cream, grated cheddar, sliced olives, and salsa--kind of like a taco but with a potato instead of a corn tortilla.
