Oh boy, I deal with bronchitis all the time and am always wondering when to get back to working out. The doc told me that you want to listen to your body and if you are still tired and achy, give it a few more days. Once you do start back if you are coughing like mad then take your workout down a notch and maybe just do an hour on the treadmill at a relaxing pace just so you can get in some stress relief.

Oh gosh, I get bronchitis a couple of times a year and I feel like it is never going away. This past time I had to be put on steroids for 10 days (I have asthma so it doesn't help). I tend to give myself about a week to get over the worst and then jump back in with light weights and longer cardio. I too use exercise as stress relief so when I can't get in the gym it drives me bonkers.
I've recently been taking Yoga classes and have found I can do Yoga even in the worst of my breathing issues so it might be something to try.

Oh, and have you visited the Zumba board to ask the leader there (she's an instructor) what she recommends about getting back to class? http://forums.ivillage.com/ivillage/?category.id=iv-fbzumba
