Onion Soup?

There was a restaurant in Tulsa (a long time ago) which was known for their Onion Soup. I thought Onion Soup sounded terrible but I had to give it a try since it was the talk of the town.

It.Was.Fantastic.

The onions were very mild and the broth had a somewhat sweet taste. It was topped with crusty bread and Parmesan Cheese. Great Fall & Winter fare.

Anyone have a good Onion Soup recipe?

Well, this is only "semi--homemade" but it's VERY fast and easy, and we love it!

What I do is carmalize the onions, a lot of them because they cook down a lot. Then mix with beef stock, I don't remember if I put any other seasoning in but salt....then I too put it in a ramekin put it in the oven for a short while I then put on provelone cheese so it melts and use the very crispy bagette to soak up that liquid....it is very good..

I can't even stand the smell of parmesan cheese so that never goes into anything I fix....but Del uses it.....but he sits far away from me to eat it.......lol

That's how I remember my Mom making it Janet...with the beef stock (usually homemade)...except she always used the parmesean cheese.

BB,
Are we talking "Campbell's Soup"?
Regular sized can or the really large type?

Janet,

That sounds really good.
I used to feel the same way about Parmesan Cheese, but my dh love it on lots of things and I have gotten used to the smell through the years. :smileyhappy:

Yes, Campbell's soup, *condensed*, the 10 1/2 ounce can, is what the recipe calls for and is

I don't think I've ever tried a Paul Deen recipe that I didn't like.
Thanks for this one!!
