Have you ever cooked with fresh pumpkin? What did you make? How messy was preparation?

My mom was an avid gardener so I am very familiar with cooking pumpkin.

Always! I've mostly made soups but in winters I also make a gratin.

I've never found it to be messy. I get it cut into workable pieces (~ 1 piece would be enough to make soup for 4). I just let it roast slowly in the oven to soften it and bring out the sweetness. After that, scoop out the pumpkin, add homemade stock, put in blender and we're done.

The only fresh pumpkin cooking I have ever tried (and it WAS messy and not entirely successful) was roasting the seeds...
