Need ideas to increase vegetable consumption

Hi Everyone,

I am very overweight and trying to work on developing better eating habits. One of the main things I need to work on is eating and serving more vegetables for my family and I thought that coming to a board for vegetarians I might get some ideas on how to make vegetables that we will actually eat. I'll admit our favorite vegetable is probably the corn in tortillas. I don't know much about how to buy or cook vegetables because they just aren't on the top of my favorites list. I would appreciate any ideas.

I'm not a strict vegetarian, but I do love veggies! Getting my kids to eat them was always a battle, but I found out I could get them interested with salads easier than anything else. Maybe it was because I'd put out containers of all types of raw fruits and veggies, like at a salad bar and they could each create their own. They'll eat raw carrots, caulifouwer and broccoli that way... but not cooked! LOL And they all discovered they love mushrooms, so now I make a meatless spaghetti, using mushrooms instead and they devour it!

Ive been veggie many many years now and I tend to do a lot of stir fries. You can hide all sorts of veggies in there and if its something they refuse to eat then grate that veg into the stir fry and they wont notice. I usually cook a few Quorn/Sainsburys sausages and then slice then into rings and chuck then into the stir fry for the last few mins. Plus a dollop of tomato ketchup stirred in last thing will hide all manor of flavours. I do the same with spagetti/noodles. I wok some veggies till soft and then stir in cooked noodles. x hope this helps x
