Veggie Pot luck dishes.....

It's Christmas time and you know that means we will all be whipping up something special for about a zillion pot luck and pitch in holiday parties. What's your favorite veggie dish to take to pot lucks or pitch ins?

Hah! I'm trying to think what I veggies I will make this year. There's always a nice pumpkin soup which is easy to make but packs a lot of taste.

Depending on what kinds of mushrooms are available, I do mushrooms with garlic or a mixed mushrooms dish.

Today I looked at a string beans with garlic recipe which I might just make for Christmas Eve dinner, and perhaps caramelized corn, too which will be completed by roast or mashed potatoes. We'll also have a green salad.

Speaking of corn, I was at a party on Sat night and someone brought in a cornbread casserole that was fantastic. They are supposed to be emailing me the recipe so I'll share it if they do. lol

I make a wild rice and brown rice casserole with dried fruit (cherries and apricots) and nuts (pecans)...

Crockpot Spaghetti Monterey

1 lb spaghetti
1 10-oz box frozen spinach
1 can cream of mushroom soup
1 cup sour cream
2 cups shredded mozzarella cheese, holding back 1/2 cup
1/2 cup parmesan cheese
1 egg
1 pkg French fried onions, reserving some for topping
Black pepper

Cook spaghetti, adding the frozen spinach during cooking so it can thaw.

In a large mixing bowl, combine the rest of the ingredients except for the reserved cheese & FF onions. Mix well.

Drain spaghetti/spinach mixture and add to the sour cream mixture. Place in crockpot (use one of those crockpot liner bag for easy clean-up!). Cook 4-5 hrs on low. 1/2 hr before serving, top with the reserved cheese and FF onions, and turn heat to high to finish cooking. This is a huge hit at my church potlucks!

I also make a bbq meatball...tofu meatballs with a sauce that's a mixture of apricot jam, ketchup, maple syrup, and a bunch of seasonings. I'm at work and I don't have that recipe memorized tho, LOL ;-)

Susan, that spaghetti dish sounds SO yummy! My kids would love it, so I'm going to have to make it now. :)

My family loves it...even my ds that won't eat spinach in any way shape or form.
