How was your Thanksgiving???

Ours was really pretty good! I started defrosting the turkey in a water bath on Wednesday morning. I'm thinking that this was the first time I've cooked a fully defrosted turkey. Now I understand why my turkey has always taken MUCH longer to cook than it was supposed to. (Duh!)

Wednesday night I put the turkey in the brine and let it marinade over night. I also precooked the potatoes and yams so there would be one less thing to do.

Thursday morning the turkey went in and was beautifully brown (and moist!) right on time. All of the food was great, except for my pumpkin pie. :( It wasn't bad, just blah I guess.

So how was your turkey day? Any big hits or big misses?

It is great to read your turkey turned out well, Kellie. It can be a big disappointment when the main item on the menu doesn't. It was just the two of us this year so I cooked a couple of Cornish game birds. I also brined them but next time I think I will dilute the

Sorry to hear the birds were just okay. I've never cooked a game hen before.

Sounds like a long trip! At least you'll get to make your own turkey, even if it is a week or so late!

Speaking about pork belly reminds me, I haven't had any fresh side pork for sometime. One of my favorite flavors when it comes to meat,

Actually Kellie a game hen is much like a small fryer. I think they have a bit more flavor then a regular chicken. I suppose they have a bit more room to exercise which

"She can balance a budget and manage a team beautifully, but she was never allowed in the kitchen because she always screwed something up. DH is just far too impatient to make anything more than top ramen or a bowl of cereal."

OMG this is cracking me up - I'm a combination of the two. I didn't inherit any of the cooking skills that my mom and grandmothers had. I just don't have a good cooking intuition I guess. AND I also lack the patience to make anything in-depth. I'm really working on it though.
