It's Meatless Monday!

Julianna and I were talking in another thread about "Meatless Monday" at school and how we could do it at home as well. Anyone up for the challenge? You could do one meatless meal each Monday, shoot for the whole day, or just pack meatless meals for the kids. Any way you'd like to participate is good!

Dh threw a roast in the crock pot this morning, so I'm shooting for a "Mostly Meatless Monday" this time. :@)

This morning I had yogurt w/ granola, and I'm eating veggie soup for lunch.

We had vegetarian chili on Monday. I can't remember what I had for breakfast and lunch, though.

With the adjustment to 2 kids, I've had to make a weekly meal plan. I've decided to base it on a rough plan of chicken once a week, red meat once a week, beans once a week, vegetarian pasta once, eating at in-laws once (which we already do), leftovers once a week, and leave the 7th day flexible. That gives us at least 2 vegetarian nights a week, possibly 4. I'd like to eventually increase that until we're only eating meat once in a while.

OMG, I totally missed this thread! I'll start this Monday. I'll definitely go meatless for DDs lunch and try for dinner as well. DH is mostly a carnivore, so it's gonna be tough! :)

Love the new siggy Roma! Your kids are adorable!

I'm trying to limit red meat to once per week as well as it seems that's the most detrimental to the environment. I cooked a whole chicken last week for the first time and was surprised by how many meals we got from it. I made chicken enchiladas the first night, we had chicken burritos, then used the rest in hot and sour soup, plus we still have one portion in the freezer. And the chicken was only $3.27 USD. It definitely went a long way!

Maybe you can "just happen" to have spaghetti night every Monday, lol!

LOL, I'd have to get some meatless ground beef to trick DH 'cause it's not spaghetti with out meat, ya know! But DH would be thrilled beyond belief to get spaghetti weekly, he loves it.

My MIL eats that ground "beef" from Boca - it must be soy I guess? It really tastes pretty good, although it's a bit expensive.

It's Meatless Monday again. Who is joining in today? What are you eating?

I made the kids oatmeal this morning and I had banana bread. For lunch they got cream cheese and jelly sandwiches and, so far, I've had a bowl of cereal (not a really healthy lunch, but it sounded so good).

Tonight I'm making spaghetti. We picked a bunch of tomatoes off our plants yesterday. Anyone have a good spaghetti sauce recipe? I've never actually made it before.

Here's a recipe I found on the Quick & Easy Recipes board~

Marinara Spaghetti Sauce

2 tbsp. olive or salad oil
2 garlic cloves, minced
1 sm. onion, chopped
1 (16 oz.) can tomatoes
1 (6 oz.) can tomato paste
1 tbsp. sugar
2 tsp. basil
1 1/2 tsp. salt

In medium saucepan over medium heat, in hot olive oil, cook garlic and onion until tender, about 5 minutes. Stir in tomatoes and their liquid; add remaining ingredients. Reduce heat to low. Cover and cook 20 minutes or until mixture is thickened, stirring occasionally.

Did anyone else have a meatless Monday?

My spaghetti sauce didn't turn out so well. It was okay, don't get me wrong, just didn't have that "Wow factor" that I expected from homemade sauce. I'll have to keep trying!
