January Challenge ~ eat your pantry!

A friend just told me about this Eat From Your Pantry challenge and I thought it would be a fun thing to do here as well.


Part of our goal this year is to get through all the boxed, canned, pre-made food in our pantry and start making more from scratch. We've also decided to do away with our chest freezer, so we have a lot of food in there that needs to be eaten.


So...I thought this would be a great way to get through a lot of that food all at once. It's also a good way to save money by making due with what you already have.You can pretty much make your own rules - just buy produce, just buy dairy, make no more than 1 trip to the store each week, spend less than $100, etc. Anything goes.

Just had my first meal scrounged from my pantry - Chili! I found a can of tomato sauce, a can of kidney beans, and some chili seasoning. I also added part of an onion and some carrots that are heading south.

For a single person like me, it was a shock to se how much "stuff" has accumulated in my miniscule pantry.

Last night I made a variation of Shepherd's Pie~

I used ground beef from the freezer, cooked it and mixed it with beef gravy from the pantry. Put that in the bottom of a casserole dish.

Then I added a can of corn from the pantry on top of that.

I made some mashed potatoes from the cupboard, mixed them with cheese and some spices and put that on the top of the meat and corn.

Bake at 350* until brown and bubbly. Yum!

I so need a challenge like this! I've been trying to make more things from scratch for almost a year now and I am getting there. I still have room for improvement. I actually like it when we get low on food because it forces me to get creative with the meals I make because I just use whatever we have. I went shopping last weekend so our pantry, refrigerator and freezer are all pretty stuffed right now. This should be interesting...

I like it when my cupboard gets bare too. I hate when it's all cluttered and stuffed to the gills. Especially since I'm the only one who seems to be able to keep it organized.

Wow thanks for all the info Anna! ITA about the "filling bellies". It's crazy because he *knows* that this is the case, yet the "big deals" always win out over the healthy food. I've been trying to keep him away from the store.

Food is the biggest area I'm working on changing for us this year, so we shall see what kind of an impact I can make.
