My usually silent cat is LOUDLY meowing

My cat Lucy is 3 years old. I adopted her from the Humane Society in NYC. I moved with her to the Bay Area 3 months ago. We moved from a 1 bedroom Manhattan apartment to a 5 bedroom, beautiful house (with my mom - it's just my mom and me in the house with her).
Since the day I got her, she's been silent. She didn't have a meow. She would open her mouth very wide, and no sound would come out. That seemed genetic (she's from the Rikers Island cat colony). Also she was generally very shy.
Now she's bossy, demanding and LOUD. If I shut her out of a room (my mom is allergic so we don't let her into the master bedroom), she SCREAMS outside. She screams and follows us around the house. If I leave the house, she waits inside next to the front door...
(Note: I don't and won't let her outside the house)
...and generally, she's high maintenance. My mom thinks she's being princessy and bratty -- my mom views this with great indulgence as she adores Lucy -- I'm concerned that there might be something wrong.
We're taking her to the vet, but I also ask all of you: psychological or health related?
The final VERY important piece of info is that I had a second cat named Oscar. He died due to a genetic problem. She and Oscar were just getting acclimated when he died. I can't get a second cat until I move out of my mom's house because she's allergic to Lucy as it is. Would a second cat fix this problem? Is Lucy just lonely?
Please weigh in.
I really appreciate it. Thanks.

To me, it sounds like she is lonely since you mention that your other cat died as they were getting acclimated to one another.

Thanks for the response. Yes, she is spayed -- I am 100% pro-spaying/neutering, and I believe the Humane Society wouldn't have adopted out an animal which hadn't been fixed.
Thanks also for reminding me that dairy is bad...you're so right, I'll put a stop to that.
She probably is lonely...
I really appreciate your response.
