Complicated question regarding possible job change, having a baby any day, hubby's self-employment, and insurance! Ahhh!

Good afternoon, ladies!
My question is a bit complicated and I don't really know where to go to, so hopefully some of you can help me or at least direct me to where I can find my answers!
I am currently on maternity leave, and due with my baby any day now. I have no important info on him (birth date, social security #) obviously.
Today, I had an interview for a job I've been waiting 4 years for! For the most part, it'd be better for my family. I'd have regular work hours, and higher pay, though not much higher, every penny helps! I won't know until the end of the month if I got the position or not. By then, my baby should be here. My family is currently covered with full benefits with my current employer, but if I switch jobs (which I'm not planning on putting in my two-weeks' until toward the end of my leave), we won't have insurance for 90 days. After 90 days is up, my family will be covered under dental and vision, but only I will be covered under medical. I've been looking under ObamaCare and CHIP, just to have some options ready.
My husband is self-employed. He doesn't have paychecks, and his month-to-month income constantly changes. At tax time, he files a Schedule C (I *THINK* that's what it's called!) by printing his expenses and customer receipts.
So how would we show his income if we applied for these benefits? Would be be able to do a month report similar to what he does for the year for tax time? I do believe we would qualify for reduced cost insurance for our son. At the very least, with ObamaCare, the extra income I'd make at this new job would go directly to insuring my family, so it's not really like we'd be losing money, although the extra income really is needed right now.
