What am I having for dinner tonight?

I'm trying to be a "domestic goddess" once again. That means cooking dinner each night. I spent a year hardly cooking. We did a ton of eating out. Sanity is returning so, I am back to cooking. My kids are so tired of my standard recipies. I need an idea for boneless skinless chicken. I have 3 breasts and would like to stretch it, meaning I will cut or shred it up. Let me have it girls!

Have a finger foods night. I did this about a week ago. I took one big boneless chicken breast and chunked it into 1" cubes, stir fried them in a skillet till about half done(a couple minutes) and then added barbecue sauce and 1/2 water, stirred a little bit to coat everything, put a lid on it and left it for about 5 minutes. I fixed this with a veggie platter (celery, carrots, olives w/ ranch on the side), and a Frescheta supreme pizza cut in squares. James and the boys love this. And it only takes about 25 minutes from start to finish. Everyone had lots to eat and we even had leftovers. The chicken bites were a big hit with all the boys. Not quite gourmet.

What about chicken quesodillas? They are very yummy and easy. Do you see a theme with my cooking? Easy has to be in the title.lol

BINGO! We have a winner. Quesidillas are it. My kids love them. The chicken will bulk it up and I can add guac, sour cream and salsa....THANK TONS!

A chicken stew or smothered chicken would also be good, and it doesn't take that long to cook either one.
