I sometimes get into a funk when my son is with his dad.

Now I never thought about adding chicken for meatloaf.

I am a Josh Groban fan myself. His music can bring a smile to my face and tears to my eyes. I understand the starting to want hot meals. My boys are picky eaters and with money being tight I usually don't fix things they won't eat. They aren't real big on meat and potatoes and I would love some fried chicken and mashed potatoes.

Sorry no tricks. My boys pretty much would live off crap food if I let them. (hamburgers, french fries (their idea of meat and potatoes), pizza, etc.) I just want good old home cooked food like I used to make when I had a husband.

I have a very sneaky trick that I would pull when my kids wouldn't eat their veggies. They LOVE smoothies and I keep frozen bananas and berries around all the time to whip one up whenever they wnat one. I have been known to throw a handful of frozen green beans into those smoothies and they are none the wiser ;).

My "recipe" -

1+ cup milk
1 frozen banana cut in pieces
a couple of frozen strawberries or small handful of frozen blueberries
a small handful of frozen green beans (or any mild tasting frzn cut up veggie would work) - be careful not to change the color - rofl!

Adjust the milk to make the consistancy and sit back and watch the kids eat it and enjoy!
Oh and sometimes I throw some soy protien powder in it.

I hate to cook so much for myself. I am not very good at eating left overs and I can't afford to waste it. Oh well, I guess I'll stick with SpaghettiOs. Enjoy your kid free night. Hugs, Brenda
