I use to always be able to have sex 2 or 3 times a day and lately it seems like a struggle to get myself "working" if you know what I mean. It isn't the person I'm with because she is very attractive. Some situations, I'll be ready to have sex and then probably 2 to 3 minutes later I won't be able to do it. I'm a guy and 21, shouldn't I be able to have sex 7 or 8 times a day?

How much time are you allowing between ejaculating and expecting an erection? You're body isn't designed to be able to go from one to the other without time between them, and that time can vary for each guy. If you're interested in having sex for longer periods of time, instead of focusing on being able to get another erection after ejaculation, perhaps you should focus on delaying your ejaculation (lasting longer). There are ways you can train yourself to do that. Here's an article that you might find helpful if that is something you would like to try:

Even if you're not having problems with premature ejaculation, these exercises can help you last longer.
If you do feel that you are having difficulty with obtaining or maintaining erections, you should see your doctor. There are medical reasons why this can occur. There are also psychological reasons why it can occur. If you are worried that you won't get an erection, that alone can often guarantee that you won't.
Thinking back to my time of having sex with 21 year old guys, I don't think I met many who would be able to have sex 7 or 8 times a day, especially not with any regularity.

I think part of that might depend on where you're reading your information.
I'm not saying it's impossible, but different people consider "a time" to be a different thing than another person might. Men are able to have an orgasm without ejaculating too, and some men don't always have an orgasm or ejaculate when having sex.
If you're able to perform 2 or 3 times a day, including ejaculation, with regularity, I would think it seems things are working fine, and above what others might consider normal.
