Uncircumsized?

The guy I'm with right now recently told me that he was uncircumsized because he wasnt Jewish. I explained to him that you didnt have to be Jewish to be circumsized, generally in their religion they just have a type of ceremony for it (I know the name I just don't know how to spell it haha) -- but he said as far as hes concerned hes not...although it doesnt really look like he is uncircumsized. I've never been with someone who was uncut but from pictures ive seen in health classes and what one of my friends has described to me it doesnt seem to be his case...I don't know why but its kinda bugging me that he may not be only because I've only been with circumsized men.

Welcome to the board, Dee.
I'm not sure what you're expecting, but typically, the erect penis won't show as much difference between a cut and an uncut male. The foreskin retracts when he becomes erect.
Many cultures do not routinely perform circumcision, so I'm not sure why the focus between the two of you is as to whether or not he's Jewish.

The Jewish ceremony you're talking about is called Bris.
A circumcision removes a little flap of extra skin!

Correct. It was (and still is) very common in many countries and has been for many years. Circumcision has been touted as a cure for everything from masturbation through to better hygiene to a cure for cancer. In my country 40 years ago it was recommended for everyone by the health profession, nowadays it's never recommended (but its still done if parents request it).
Hygiene is the biggest issue he's likely to face. "Smegma" is the secretion that builds up under the foreskin if unwashed. It's quite unpleasant stuff (kinda like toe jam) but health-wise it's not the breeding ground for health problems that some might think. Cleaning under the foreskin is generally very easy (just another excuse to play with it!) and no more of an issue than washing your hair or washing your hands - but some guys aren't taught those basic good habits either so it can be a problem with some guys.

I think that he'd probably know and if he says he is uncircumcised then he probably is uncircumsized. As already mentioned, when his penis is erect the foreskin usually retracts partway or all the way itself, or he uses his hand to slide it back (like rolling a sock off your foot). When flaccid, the foreskin will completely cover the head.
When the action is on, there is really not much difference between circumsized or uncircumsized so it's not surprising that you don't really know for sure.

That's one that you'll have to work out for yourself :-)
There are probably differences between doctors, too.......how MUCH skin they will remove.....some might take more off than others.
