I make a lot of sweet potatoes in the micro. Peel them, chop them up, place in a covered, micro-safe dish with a little water and cook for about 8 minutes. You can eat them just as they are or mash them with a little butter and brown sugar. One of my faves.

Gosh, I get exhausted just reading about all the cooking some of you do, LOL!
I actually really enjoy cooking - especially trying to make healthier versions of old recipes. I made some yummy no-fat pumpkin cookies last week.

You're lucky that you do enjoy cooking for yourself, I really wish I did, it would make it a lot easier to eat better.

Yes, I think we do think alike when it comes to food!
At one time I loved to cook. I have gotten to where I "assemble" meals now. Like a rotissire chicken from the deli. You can make salads out of it. Whatever I make the evening before is what I take for lunch. That keeps me from buying stuff I don't like and wasting money. Potatoes, pink salmon in the packets,eggs,and yourgat and cereal. Canned Blackbeans with lowfat cheese is also quick and easy. I also buy one bag of baby spiniach and lettuce,raw veggie medley and zucchni. I shop every Friday for myself and only get just enough to last a week. I treat myself to a resturant dinner on Sunday.

I have a sweet potato story too, but it's not nearly as pleasant as the baked potato story and has left me with an aversion to them.
I'm glad I'm not the only one who thinks it all sounds like a lot of work!

Yes, I hate the waste that comes with buying fresh veggies for one. Salads often bore me and I hate them unless everything is absolutely fresh. What I have started doing a lot lately is roasting veggies in the oven. Often I take a box of fresh mushrooms, add a pepper or two and a large red onion and slice it all up into large chunks. Then I coat them with a mixture of 1 tbs olive oil, fresh minced garlic (as much as possible!), seasonings and about 1 tsp of balsamic vinegar and dried basil. I roast them on a cookie sheet at about 475 degrees for 20 or so minutes. I does involve a lot of chopping but I'll usually have enough for several days. And I have been experimenting with different veggie combos. Using crushed rosemary in place of the basil is a good alternative.
Speaking of microwaves, I just discovered a tasty and healthy dessert that is perfect for one: baked apple!
I core a gala apple and peel a strip from the top and put it in a bowl. Then I fill the core with a mixture cinnamon, raisins
