I'm hosting Bunko next week and I think I've decided what to make for dinner, but I still need one more side/snacky thing to serve.

Sounds like fun, but it'd take me a long time to get the hang of that!
Yeah- I'm not a fan of fat free cheese.
Fat free cream cheese is D-I-S-G-U-S-T-I-N-G with a capital D!!!!!
if you want to do lower fat I would definitely do the reduced fat but don't go fat free.

Well, I'm really glad you told me that!
Perfect guacamole:
3 ripe avocados
1 jalapeño pepper (1/3 of the pepper)
2 sprigs of fresh cilantro (about a tablespoon)
Cut the avocados into halves, score the inside of each, and then spoon them out. Chop about a third of the pepper up finely, add fresh chopped cilantro, blend in with the avocados with a fork or use a food processor and add salt to taste. *Sometimes I'll squeeze a little bit of fresh lemon juice over it to keep the nice green color.

Okay, this isn't really Mexican but I made it for a pot luck and it was a big hit (and it made a ton of dip!).
Cheesy Cheddar Dip
8 oz. shredded cheddar cheese
8 oz. cream cheese
1/2 C milk
1/2 C chopped red pepper
Whip the cream cheese until smooth, slowly mix in milk and then stir in the cheese and red pepper and refrigerate for several hours.
I served it with wheat thins. The dip isn't crazy healthy but if you used low fat cheese and cream cheese it might make it a little better!
I think I saw those when I bought the alcohol yesterday and thought about getting them, but they were more expensive than just regular wine coolers and they didn't look that big.
