It's absolutely horrible for me, I'm sure, but my new favorite thing to make is chicken enchilladas.

Do you make them with green chiles, cream of chicken soup, sour cream & cheese?

I made pork chops with rice tonight; new recipe so easy! It consisted of rice, four chops, two cans of cream of mushroom soup(didn't tase like m-soup in the end, tasted like brown gravy), a can of water, garlic powder, cajun seasoning (which I did not have so I used paprika and cayenne pepper), black pepper, and a cup of rice.

*Dredge chops in lightly salted flour(1/4 c. will do it), brown them up in 2 tbsp oil, drain off oil, dump in the soup, water, spices, cook the rice separately and voila!

I'm sure this isn't healthy either especially since I added a little salt and used white rice(not to mention the soup is loaded w/ sodium) but it was hella good!

It was green chilies and cream cheese with green sauce and cheese over the top.

Your recipe sounds good, too! I've never had it made with green sauce or cream cheese. I'll be making that soon . . .

I make those like this:

Mix
Tablespoon of butter
Sour Cream (non-fat makes them slightly watery, but its ok if you're calorie conscious)
Cream of Chicken Soup
Shredded Cheese

Saute in butter, salt and pepper:
Onion
Green Pepper
Tomato

Brown chicken with a healthy dose of cayenne pepper and a bit of garlic seasoning salt

Need one can of chiles and shredded cheese

Add the sauteed veggies and chiles to the cream of chicken mix and set aside about 1 cup of the mix.

Mix in the chicken and then fill the burritos.

With the non-chicken mix, spread over the top and then bake for 25 minutes.

When its ready to serve, sprinkle more cheese on top to melt. Then take out of oven and serve.

I'm telling ya....its not for the calorie conscious, though you can use the non-fat sour cream. But its one of my favorite things to make and you get leftovers for at least 3 days.

Thank you! That is how I make mine, minus the cayenne and garlic but I bet that is a nice punch of flavor. Mine are always a little "flat".

Okay, I was watching Rachael Ray yesterday, and now I want to make homemade baked corn dogs!
