Don't be scared to ask him to clarify. All of our interpretations could be wrong. If you want to get to know him, get him to explain. I'm sure he'd want you to understand him fully instead of guessing.

--My take is pretty much the same. He must be a carefree guy. Free being the operative word.
I had the same kind of impression that you did.
The best way to know is to ask him. *I* don't think you sound like an idiot. In fact you can be humorous and playful about the way you ask.
Hey I never "met" a guy whose personality is a little "unbound" and wondering what exactly you mean by that? Is your personality Hercules unchained? Is your personality likes to be off leash and run around the yard barking? Is your personality have many different faces like ...?
You get the idea.
OR you can just ask in a plain, straightforward manner since that IS ambiguous.

I'm not sure how to interpret that either...I'd probably think he was kind of weird and probably move on to the next.
I agree with Stacey and the poster (sorry - it's early, can't remember names at the moment) who said that, to her, unbound meant "erratic."
I would go with the erratic, unhinged possibly, "all over the place" definition.
In addition, I may roll my eyes and think the guy was self-absorbed with delusions of himself. Maybe. It's too early to tell though.
Go with it for a while anyway. Might be interesting!
