I want what Shrimps or QB have - where they have a great SO and stay in separate houses with seperate finances and separate lives where the kids are pretty much uninterrupted and uninvolved

I realize that your kids are older than mine (DS7 and DD13) but could you try a family meeting--not just to tell them about someone you are going out with but to actually discuss their feelings toward you dating and what they are afraid of/concerned with.
Your children are hurting from your last breakup because the guy bonded with THEM not you yes? So it seems that the solution is simple, i.e. NOT to introduce whoever you are dating to them. I suspect they are not thrilled about your dating not so much that they don't want you to have fun but to be set up for another loss. Plus I suspect that they are busy with their own social and school lives to notice that you go out if they are like most teens.
You know, my sister, who was a single mom for a VERY long time, (and spent many years becoming happy being single only to fall in love with the love of her life at 42 years old)
