Ok- Nicolas and I watched the Food Network yesterday, and then Judy showed me what she made for dinner- fresh pasta with a sauce made from fresh tomatoes and strawberry crepes for dessert.


Got part of dinner started for tonight:
Turkey breast marinating in an orange medley juice with garlic and ginger...
Not sure what to make with it...
As far as the turkey marinating - I do stuff like that and serve it with whole wheat couscous because it is so easy to cook - just pour boiling water over it and cover for five minutes and serve. And maybe a salad to go with?
I thought I would contribute my easy recipe. We do this with whatever meat we have left and sometimes cut up veggies too...You can add chives and sometimes salsa to change the flavor but the basic recipe is this and it gets rid of old bread the end of the eggs and whatever cheese you have in the fridge.....My son LOVES it and it is somehow even better the next day, even for breakfast....
CHEESE HAM STRATA
8 slices white bread
2 c. cheddar cheese, grated
3 c. buttermilk
4 eggs, beaten
2 tsp Worcestershire sauce
3/4 tsp dry mustard
1/2 teaspoon salt
1/8 teaspoon pepper
1/2 c. sliced ham, chopped
Alternate buttered layers of bread, cheese, and ham in a greased baking dish, ending with cheese on top. Mix remaining ingredients and pour over layers. Allow to stand one hour in refrigerator. Bake at 325 degrees Fahrenheit for 50 to 60 minutes or until golden brown on top. Cut into squares and serve.
I just made turkey breast for dinner!!!! It was those cutlets - that remind me of veal cutlets. Dusted in flour and sauteed in olive oil with sliced onions - then added lemon and a bit of chicken broth. Served with herbed red fingerling potatoes. Homemade 6 minute microwave apple sauce and toast-oven-roasted asparagus. Time from start to finish - 25 minutes flat.
I ate seconds of that - am still starved after the 5 hour ride!!

I ended up breading the turkey breasts (mixed spices into the bread crumbs for extra flavour), searing them three mins a side in a hot pan with a bit of olive oil and the throwing them in the oven.
Okay - quick is pasta - pasta with pasta sauce or pasta with broth and veggies. Pasta with green peas, pasta with shrimp or chicken.
We do a lot of "buffets" - where I put out a bunch of stuff and everyone makes their way through. Lots of leftovers for subsequent nights. Examples include: salad buffet, taco buffet, pasta/pizza/salad buffet, baked potato buffet. The taco one is the best - I use rice from the rice cooker, homemade roasted salsa, canned beans (heated up), fat-free sour cream, lettuce, chips, tortillas and fresh corn. DS loves it.
I also make a huge lasagna and we eat that with salad all week. I get away with murder - cannot imagine any guy that would do that - and DS does not complain.
He loves mac and cheese so I make that for him and add tuna to it for me.
Also make baked potatoes stuffed with broccoli.
And one day DS had a riot making a stir fry with me. I let him cut stuff up and stir the pot.
And we both love lentils and rice - I cook those in the rice cooker.
I microwave fish and chicken all the time - they are ready in 5 minutes and are perfect - our microwave has a fish or chicken setting and it just nails the cooking time to the second.
We went to the grocery store today and stocked up on the fresh fruit/ veggies, meat/ chicken/ fish and fresh milk, cheese and juice.
