After the first date, the guy texts you and asks "Can I date you?"
What does this mean?
- Is he just making sure of my interest in him
- Is he asking me to be his girlfriend
- Is he looking to pursue me seriously
- Is he looking a faster way to get into my pants

SK, you really take analysis to a whole new level LOL. I suggest you take things at face value. Answer his response with a yes or a not depending on whether or not you want another date.
Admittedly the phrasing is weird.
If he said, Can we go on another date? that would make sense.
Can I date you? is like he is looking for some certainty or reassurance before continuing.. which usually, to me, is a sign of either clingy insecurity, or a guy who wants the emotional nutrition of knowing women want him (these guys, however, often need more than one woman to want them to fill their need).
Either way, it's a littlle oddly worded.
I'd have texted back "What do you mean?"
If he can't answer that one clearly, the guys got some ish.
