We are both very busy with work & have been seemingly casually dating...I'm 24 he's 33 & we both work in finance.
I'm a sarcastic smart ass, so I playfully pick on him.

I don't think sex ruins anything that wouldn't have been ruined at some point anyway. It clearly didn't change his intentions toward you, nor you toward him.
This is a guy who is obviously really into you, worth getting to know, and enjoys your company.
Continue getting to know him, it's going fine so far. I agree that sex does make it more difficult to tell someone's intentions toward you but if he's going on dates with you and enjoying talking to you without having sex, that's a pretty clear indicator that he's not just interested in sex.
