My dinner was awesome!

I made a chicken meat loaf ( If you want the recipie, I'll post it under recipies), with garlic cauliflower mashed potatoes, a sliced tomato, and lima beans.

Ahhhhhhhhhhhhhhhhhhhhhhh...................

Sounds like a great dinner. I had grilled Mahi Mahi and stir fried veggies. That was yummy too!

I had a great dinner, too!

Quartered tomatoes, two thick slices of onion, sliced zucchini (cut in half, then quartered like pickle spears) with fresh basil over all, broiled.

Fresh scallops, sprinkled with a touch only of hot pepper, broiled - put in a little later than the veggies.

Several minutes later when everything was about done I put thin slices of low fat mozzarella over the veggies and sprinkled low fat Parmesan over the scallops. Let the cheeses melt.

Served with 1/4 avocado, sliced & sprinkled with lime juice - put a little lime juice over the scallops, too.

Mmmm, it was good - and quick. And clean-up was easy, too - I broiled it all on little "pans" I made out of aluminum foil.

I had a great dinner too. I rolled some tuna steaks in sesame seeds, and seared them in hot sesame oil. Then, I served them on a bed of mescalum greens and ribbon cut cucumber. I made a dressing of rice wine vinegar and olive oil, and served it with a little wasabi. Yummy!!

That sounds like something from a restaurant. OMG. It sounds great. Tonight I had chicken fajitas without the fajitas. But lots of black beans. Yum...

Tonight, my husband grilled pork chops, I made some black eyed peas, and MIL made acorn sqash with some illegal ingredients:) (she sprinkled brown sugar in with the butter), but she's not on SBD. It was all so good!

Are we sure that black beans, and other beans are ok? Their glycemic index in the SBD is significantly higher than other legal foods? Any thoughts?

As long as it's gi is 50-55 or below. He does say beans are legal...I promise:)

It's under the vegetables and legums section. The only beans not allowed during phase 1 are pinto beans and black eyed peas.

I also forgot to mention I'm in phase 2 and about to be in phase 3...that's where the black eyed peas came from in my dinner the other night. During phase 1 I ate kidneys, limas, navy, and butter beans.

Well, I am hoping they are all right, because I am in Phase 2 with about 5 lbs to go before my goal setting time. lol. Yes, Lugumes are all right. Make sure if you are doing Black beans, you get them unseasoned. Seasoning sometimes may be illegal.
