I'm on day 5 but very confused about hummus and cottage cheese. why can we eat low fat cottage cheese but not have skim milk? they say don't worry about portions, so do we need to stick to 1/2 cottage cheese?

and hummus. i ate a whole container the other night. why is hummus allowed? the one i use has 5g carbs per two tbsp...that's not so great.

also..eggs. is there a limit as to how many eggs you can eat a day?

bacon - can we eat regular bacon or must stick to canadian?

how many carbs a day are we allowed to have on phase 1?

Hi,

Cottage cheese is a protein - not a dairy product. There is no lactose in cottage cheese. Lactose is a sugar.

The hummus is fine - it is on the "foods to enjoy" list. There are carbs, but no sugars.

There is no limit on eggs.

You may have Canadian bacon or turkey bacon. Because fat does count. It is not just low carb - but also low-fat.

We don't count carbs. Nothing on the "foods to enjoy" has too many carbs, unless there is a limit suggested.

I have to ask....what did you have with your hummus? I usually love the stuff, but in P1, I cannot have the whole wheat pita triangles, or the carrot sticks, or the sandwich with sprouts and hummus since I cannot have the whole grain bread.

I tried celery, cucumbers, and red pepper strips, but am looking for other ideas.

Before I get too excited, as I do so enjoy hummus... If I'm understanding correctly, There's NO limit on how much hummus we can have??? Because if so, that's awesome!

What is a good brand of hummus to try???? I don't think I have ever tried this hummus of legend, but I am willing to try anything. I am looking for a good brand or a good recipie. Thanks!

I really prefer to make my own hummus. It is pretty easy....most people use canned chick peas (garbonzo beans), but you can use dried one that you soak and cook. You can also use white canellini beans or black beans for hummus. I suspect the canellini beans would be p2, as they are like kidney beans.

Anyway, put your rinsed beans into the food processor along with some lemon juice, garlic (or powder if you prefer) and tahinni. I like mine thinner, so I add water, too. Drizzle in some olive oil. Blend it really well until very smooth.

Optional add ins: roasted red peppers, tabasco, scallions, parsley, etc (get creative).

Sorry I don't have amounts, but it is all really to tast.

For anyone who hasn't seen tahinni, it is a middle eastern ingredient that is a sesame paste. Peanut butter could be used if you really are in need of a substitution.

I used to love this with whole wheat pita triangles and carrots, but this week it has been celery, cucumbers, and red pepper strips. I cannot wait for p2 to have a sandwich with whole grain bread, sprouts and hummus. Both have been great work lunches in the past and will be in the future.

And, yes, I confess, I have been known to use my finger or a spoon to just eat it!!! LOL
