Hello everyone! I am new to this board but I have been reading a lot of your comments and I see a tremendous amount of support here -- so maybe you can help me out. I am only on day 3 of phase one and already i am bored with what i have been eating. If anyone has any good recipies out there that would just be wonderful. I have work at two full time jobs so I don't have a lot of time to cook and I am not a huge fan of vegetables - mostly broccoli and green beans for me. If there is anything that anyone can do for me to help me out that would be great. I am slowly losing my commitment to this diet. Thanks.

Have you tried the turkey roll ups? I got some herbed turkey and roll it up with part skim mozzarella, a leaf of boston lettuce and some hummus. Delish! (I've been eating this for breakfast as I get sick of eggs very quickly).

As for veggies, it looks like you prefer green veggies. Have you tried out any of the greens out there?

Hi, I will try to help you. These are the things that work for me. Basically, I eat anything my family is eating but without the carbs. Last night the kids had chicken parmisian. I had my chicken breast grilled with sauce and mozzerella, while theirs had the breadcrumbs on it. And I just had a big salad on the side. If you like brocolli, how about making soup with it. Brown an onion in some olive oil, add some broccoli and broth to cover it, throw in any spices you like and when the broccoli is tender, puree the whole thing. I do the same thing with cauliflower. This really takes the edge off my hunger. Do you like chili? How about a burger or steak on a bed of greens? I had a tuna melt the other day (slices of tomato, scoop of tuna, turkey bacon if you like, Alpine Lace swiss melted on top). How about chicken sausages grilled with peppers and onions. Also, try these websites: www.lowcarbcafe.com and www.fabulousfoods.com. These things really work for me. I hope these ideas help. Stick with it. You can do this. Good Luck! Keep posting! Cathy

P.S. - There is no set amount of vegetables you have to eat. Just eat what you like.
