I am planning some menus for the diet, I am starting tomorrow. Any quick dinner ideas would be appreciated. Is mustard allowed on the diet? I do not see much mention in Phase 1 about ground beef or hamburgers? Are they allowed, without bread of course? Or just ground beef in general with chili for instance. Thanks in advance. This board is great!

Hi,

Yes, mustard is okay (not honey mustard). Also, lean cuts of beef, including ground beef. So hamburgers and chili are great ideas. Here are some of my quick meal ideas:

Chicken parmesan with grilled chicken breast, sauce & part-skim mozzerella

Chicken fajitas with peppers & onions (no tortilla)

Quick saute of shrimp with salsa (check the label on the salsa)

Filet of sole in the oven with lots of vegetables and a sauce of your choice (sometimes I use a legal salad dressing or salsa or a mixture of herbs, lemon juice & garlic)

Any grilled lean meats with a big tossed salad

Grilled chicken sausage with peppers & onions

Also, try the taco meatballs in the recipe section (these are great). I shape this into a meatloaf and put the cheese in the center.

And don't forget to add those beans. Avocado is also allowed and I find it very satisfying with some of these meals. I chop up 1/2 an avocado, add some diced tomato, some red onion, black beans & olive oil. Yum. It is especially good with the fajitas or the chili.

So happy I could help. I stick to oil & vinegar mostly, but you have to check the labels on bottled dressing. They must be under 3 grams of sugar. Newman's dressing is one that I like. It is best to find ones made with olive oil or canola oil and low fat is also helpful. Enjoy!

I've been making my own salad dressings some of the time. Some of my favorite vinegars are raspberry and cherry balsamic vinegar. You can also find some really good balsamic vinegars in specialty stores but they aren't cheap - a 250 ml bottle I got was about $30 but the flavor is so wonderful and you don't need too much of it. It's good enough to have on veggies by itself; when I first got it I was dipping bread in it. Would have never thought to dip bread in vinegar but the store had it out for sampling.

I get olive oil from a vendor at the farmers market, it's fresh and flavorful. I buy small bottles so it doesn't go rancid, just enough to have on hand for a month or so.

I bought some lettuce mix at the farmers market yesterday, it even had edible flowers in it. Too bad the vendor disappears at the end of November and doesn't return till April. I'm trying to grow some lettuce myself but I don't think anything is sprouting yet.

Here are few more quick dinners for you:

Roasted veggies in the oven with olive oil, s&p (I used eggplant, red onions, zucchini), mixed together with browned gound sirloin, topped with parmesan cheese.

Marinate chicken breast in the morning (see marinade suggestions in some of the recipes in the book) and just serve with a salad and hot vegetable.

Tonight I am going to make escarole soup with white beans and ground turkey meatballs.
