Worried about weight.. :(

I'm scared to weigh myself now cuz i'm scared i've gaine weight. I don't feel i'm on a diet and i know for sure i'm eating more calories than last week, before i started SBD and was on a 1500 calorie diet.
I've been eating this eggplant parmesan for a few days and it was absolutely deliceous, but i just read in a post that tomatoes are not permitted? and my eggplant dish had a can of tomato sauce (no sugar added, just tomatoes and spices). And i'm wondering maybe that made me gain weight?
Plus last night, i was studying for a midterm and i just was really hungry (couple hours afer dinner) so i ate more food, like laughing cow cheese, part skim mozzarella and some turkey roll ups... i didn't weigh myself this morning cuz i was scared of a gain...
now i'm worried that i won't loose weight on the diet and that i'll have to go back to my crappy calorie counting :(
and i had some cottage cheese and legumes which are stuff that are permitted on the diet but usually aren't on a low carb (which is precisely why i love this diet so much)
so i dunno.. I really don't want to cut out these wonderful foods from my diet!!!
what should i do?
