I think that pumpkin may not have a low GI but could not resist mixing some Libby's pumpkin with the last of my riccota cheese. I mixed it 50/50 with a little Splenda. Added some pumpkin pie spices and wow was it great.

So if you just got to have pumpkin flavor, try this.

One cup of boiled pumpkin has an ECC (Effective Carbohydrate Content) of 12.0. That is the Total Carbohydrate - Dietary Fiber = Effective Carbohydrate. It is supposed to be a more accurate way of measuring carbs in foods when you're on a low carb diet.

it's in bold print...that means low GI. AND pumpkin seeds are bold with an asterisk which means low GI and high nutrient density! you're good.
