hi! =)

im a college student and a vegetarian. does anyone have any good vegetarian meal ideas besides salads every day? i'm going to start the SDB this sunday and need a grocery list :) i live in an apartment so i can do some cooking but dont have TOO much time w/ my class schedule. i also am going to start working out, any advice for me on that w/ this new way of eating? any advice and tips would be great!! =)

Hi! One of my favorite recipies is roasted veggies. I make lots of it, and get a couple of meals out of it. Any veggie will do, but I usually cut up some, zucchini, eggplant, red bell pepper, celery, red onion. Sprinkle with some olive oil and garlic salt, and roast in a very hot oven. The longer you cook it, the better it gets as it carmelizes. This week I added fennel bulb to it -- yummy! For those who are not vegetarians, add some cooked ground sirloin or ground turkey - delicious and stretches the meal even further. I love it when I can cook once and get an extra dinner and an extra lunch out of it.

I don't know if you are vegan or not, but just in case, here are a couple of ideas that should work regardless:

--hummus with raw veggies (vary your beans among chick peas, canellini beans, and black beans so you don't get bored!)

--steamed or stir fried tofu with veggies

--tofu luncheon meats rolled around veggies

It will be easier for you in p2, as you will have whole grains to enjoy. Spread some almond, soy, or peanut butter on toast for an easy breakfast, or as a sandwich for lunch to go. Add some fruit and you are set.

Also, the Gardenburger brand of black bean burgers are good for p2. They do not have any trans fats or other forbidden ingredients. Some of the other popular brands do.

The book has more veggie and salad recipes than I can list. One of my favorites is their oven roasted veggies in olive oil -- red, yellow, and green peppers, asparagus, zucchini, and yellow squash. I also like to throw in cut up tomatoes, onion, garlic, and mushrooms. Grilled asparagus by themselves are delicious too.
