I thought that butter was an OK "type" of fat (in moderation of course). SBD does not allow butter, does it? I know that Olive oil can be used for cooking however what about your veggies - it's not OK to use a small pad of butter occasionally?

I don't see why not, just so you don't overdo it. Another idea is to use a spritz of margarine, such as I Can't Believe It's Not Butter margarine spray.

Keep in mind that butter is a saturated fat and this is probably the reason the SBD does not "endorse" it. Monounsaturated fats--olive and canola oils--are encouraged because they are identified as good fats since they have been found to reduce the risk of heart attack and stroke.

I am in Phase 1 and have only been using olive and canola oil. When I get to Phase 3 I will probably use a little butter. I don't like butter substitutes or margarines because of the preservatives and additives. Butter (a little) is definitely better because it is a basic food.
