I was surprised to find lima beans has more carbs than corn. Why cant i eat corn if i can eat higher carb limas??? Maybe i need to read the book!

the lima have about 6 grams of fiber to corn's 2 grams (according to a nutrition book). The higher fiber content lowers the gylcemic index. According to the "Complete Guide to Glycemic Index Values," a half cup of yellow corn has a GI of 60. I believe White corn has more fiber. Limas, in addition to fiber, have other vitamins that are valuable to your body. That GI according to the same book is 32.

I wouldn't have made it without Limas and mashed cauliflower. Great flavor and very filling.

Corn is a veggie, but Limas are actually legumes (beans), right?
