Hi everyone! I've been out of town for my son's graduation from Army Military Training (Proud Mom smiling big here!) so I haven't been able to post this week. While away, my son and I ate at a Ruby Tuesday Restaurant and discovered that they have around 30 selections on their menu that are low carb, from entrees to side choices to even a low carb cheesecake with a nut crust! Have any of you tried the mashed potatoes made from cauliflower? They even had that on their menu and it was delicious! I didn't try the cheesecake because I was trying to stay away from the dessert menu! I went to the Ruby Tuesday website and they show everything they have on their menu. What a great idea. Their site has some wonderful looking and sounding meals - even the whole grain fajitas and quesadilla. I think they are very smart to market the lo-carb diets - they are so popular now. Thanks for sharing.

The Ruby Tuesday's website looks absolutely scrumptious, especially some of those items in the Smart Eating section. Too bad there is not a restaurant near me. Looks like a geat place with plenty of healthy choices for those on various low carb and healthy carb ways of eating.

I just found their menu last week when I stopped by for lunch. They always have a great salad bar and that was why I went. It was a great surprise to see that they had several low carb options on the menu. It was the first time I had tried mashed califlower and it was actually good.
