Hi, I have been doing South Beach for 16 days. I am trying to still stay with P1 a little longer because of Thanksgiving next week. I have lost 11 pounds and feel really good about that...also, I am now totally caffeine free! I have been looking at things to eat in the P2 phase and noticed bran muffins were included. I can't find them in the stores that I shop. I found a recipe and I need someone to tell me if it would be legal. Here goes:

Sugar Free Bran Muffins

1/2 C. whole wheat flour

1/2 C. unbleached flour

1 tsp. baking soda

1 1/2 C. bran

3/4 C. milk

2 TBS. soft butter

1/4 C. honey

1/4 C. molasses

3/4 C. raisins

1 egg

1/2 C. nuts, optional

Mix all ingredients together, just to wet and then pour into either greased muffin tins or paper lined 1/2 full and bake at 400 degrees for 20-30 minutes.

I really would like to introduce a few of the P2 things into my diet for a change. Anyone that can help, I appreciate it!

Thanks for the help! I didn't think it was legal, but wanted to ask. I have found things on here that aren't in the book. This is the first diet I have ever been on that I feel satisfied! If you find a recipe that is legal I would appreciate it.

Hello I posted earlier about great recipe sites that I've found. There is a website that has recipes for both low-carb and low-glycemic. The website is ShakeOffTheSugar.net And I found this recipe there:

Blueberry Bran Muffins

The goodness of blueberries combined with healthy fiber. Fragrant with a hint of orange peel and cinnamon. Even better, cinnamon is one of those ingredients that helps to control blood sugar! Try these scrumptious muffins for breakfast for a healthy snack. No one will guess they're good for you.

2 cups fresh blueberries

1-1/2 cups all bran cereal with extra fiber(has less sugar)

1-1/2 cups plain soy milk

1 large egg

1/3 cup canola oil

3/4 cup Splenda

2 tablespoons freshly grated orange zest(colored peel)

1 teaspoon vanilla

1 cup whole wheat pastry flour

1 tablespoon baking powder

1 teaspoon cinnamon

3/4 cups chopped pecans

Wash the blueberries, then remove the stems. Lay the berries on a paper towel to dry.

Preheat the oven to 375 degrees.

Grease your muffin tins or line them with paper liners.

In a large mixing bowl, mix together the cereal and the soy milk; soak this mixture for about 15 minutes. Stir in egg, oil, Splenda, orange zest, and vanilla.

In a separate bowl, combine the flour, baking powder, cinnamon and nuts. Gently stir in the blueberries.

All at once, add the dry ingredients to the cereal mixture. Gently stir, just until blended. Do not over-stir! Too much stirring destroys the light texture of muffins. Spoon the batter into greased or paper-lined muffin tins.

Bake the muffins for 25 minutes, until the cake tester inserted in the center of a muffin comes out clean.

Makes 18 muffins.

1 muffin:

8 g. fat, 12 g. total carb., 3 g. protein, 4 g. fiber

Exchanges:

1/2 starch, bread; 1-1/2 fat

I noticed today at the store that there was a section of low carb items such as muffin mixes / brownie mixes. Though they were kind of pricey, they might be worth it just for the peace of mind. I'm sticking to phase 1 for another week or so, but if I try any of them, I'll be sure to let everyone know!

A lot of those low carb items are not really a part of this WOE. However, a lot of people seem to be using them with success toward their own weight and health goals. Some don't like the taste, and others can live with it. If you try them, do let us know what you think.
