Green and Red Peppers? I haven't seen these veggies listed anywhere, does anyone know where they stand?? Also, vinegar peppers and pepperoncini? I know they have a couple grams of carbs, and maybe 1 or 2 grams of sugar at the most? Am I doing this right??

Peppers of all varieties are listed as <20 on the glycemic index from the SBD book (p. 74). They're absolutely allowed.

With the acidic vinegar packing the vinegar peppers and pepperoncini, both are good carbs. Enjoy.

Sounds like someone is making antipasto for Thanksgiving? I'm making a small one this year; I love it. My mom used to make one that filled a turkey platter and stood about 3 inches high. Weighed a ton. That was back in the days of 20 guests sitting around the dinner table.

One of the staples of our dinner menus is the Oven Roasted Vegetables on page 168. It shows red and yellow bell peppers in it, but I sometimes throw in green too. I vary the veggies I use for variety. My husband and son like them very much too.

Many grocery store stores also carry frozen bell peppers in a variety of colors. Personally, I like the colorful food, and these work well in recipes. I don't like the frozen ones as much as the fresh ones in eating raw. In the winter, I generally buy only the green ones fresh and the others frozen.
