Sorry it took me so long to reply. I just spotted your post. I'll be glad to share the recipe. The more you eat the better it gets (unfortunately).


Cranberry Orange Relish Cake


1 White cake mix (Duncan Hines)


1 small instant coconut cream pudding mix (or vanilla if you can't find coconut)


4 egg whites


1/2 cup oil


3/4 cup water


1 cup cranberry-orange relish


Preheat oven to 325 degrees. Grease and lightly flour Bundt pan. Mix all ingredients except relish and beat 3 minutes. Spoon 1/3 batter into greased and floured Bundt pan. Make a slight depression in the batter. Spoon 1/2 the relish into depression, being careful not to let it touch the sides of pan. cover with 1/3 more batter, last 1/2 of relish, and final 1/3 of batter. Bake 45-50 minutes in oven. Cool in pan 15 minutes.


Icing


2 c. sifted 10X sugar


2 Tablespoons butter


2 Tablespoons milk


1/2 teaspoon almond extract


Mix all ingredients together and drizzle over cooled cake. And enjoy!!
