My first day... already with ?'s

Hi ya'll. This is my first day on SBD. I have very little willpower, but a few relatives are doing this plan and succeeding, and so I thought if they can, so can I. So I plan to visit here frequently to get (and give) ideas and support. I seem to be doing okay so far, but I can definitely tell my body's aching for some carbs. It almost feels like the other food is "heavy" in my stomach and I need some bread to "sop it up" in there. Wierd I know, but that's it. Oh, and as for my stats, I'm about 165 and 5'6", but I'd like to be about 140.

So it's mid-day and I'm planning dinner. Dinner will be my biggest challenge because dh is as thin as a rail and can eat anything he wants, and so he expects rice/pasta/bread with dinner. Kids do too. Very tempting for me. So, I'm cooking up some chicken tortilla soup right now, sans the tortillas. Sounds good with some red onion, lowfat cheese, ff sour cream, and avocados on top, right? Well, mid-way through, I'm realizing that its the tortillas that thicken the soup up! Cornstarch is off limits too. Any suggestions for somethign to thicken it up a bit and make it more savory?

Thanks a lot. I can't wait to learn more from you all as I stumble through Phase 1!

Shannon - All the thickeners I know of are starch based and thus to be avoided. Just another idea - can you season and puree some black beans and add the puree back into the soup to give it some thickness? Make sure the beans are on the Phase I foods list.

What about some FF Half N Half??

Also, it is my understanding that a little bit of cornstarch is ok in Phase 2.

White Beans!

Drain and rinse a can of small white beans (I think they're also called cannellini beans). Mash the beans with a fork into a puree and stir into the soup. It thickens soups and adds a little extra fiber.

Welcome and good luck!

Also,

there are some good recipies in the book for phase I meals that involve a grilled or baked chicken or fish with vegetables. My husband SO does not need to lose weight, so i would just make him a baked potato and melt some cheese or butter on his vegetables in the microwave after it was all prepared (but on his plate only.) Then my phase I meal became a normal meal for him. all of his stuff was perfectly contained on his plate and i wasnt tempted to grab anything for me! He didnt even notice the difference.

Good luck.

A low-carb cookbook I have by the publishers of "Prevention" sometimes use a few tablespoons of whole wheat flour or occasionally soy flour at thickeners. That would be OK for after Phase I.
