Side note:  I hope you all are not put-out by my recent increase in these types of posts.  My renewed enthusiasm stems from my recommit to the program (thanks Ria for the start of that thread!!!), and sharing meal ideas really helps pump-me-up!

I was not at all prepared today and I'm feeling really finnicky so I had an Ultimate Low Carb 2 bar. I didn't see anything in the ingredients that looked particularly bad and it was DELISH! I will be sure to plan tonight for the rest of the week. All of ya'lls lunches sound so yummy!!

He He. I just realized that typing "ya'lls" might be kinda funny to non-texans!!

also dinner:

16 oz water

caesar salad (no croutons)

Stacy's P3 lunch: Salad! (Red leaf lettuce, tomato, cheddar cheese, and pecans in a home-made balsalmic-olive oil-dijon mustard dressing).

Yum!

Three "roly-polys".....large romaine lettuce leaves with chicken salad and some sliced roasted red peppers rolled inside.

Lunch was a veggie quiche from a low-carb cookbook I have.


Basically; mix 2 cups sliced mushrooms, 1 cup chopped cauliflower, 1/2 package frozen spinach. Set aside
Put 1/4 c of cream in a pan and heat 'til just hot (do not boil). remove from heat and add 1/4 pound of low-fat shredded cheddar cheese. stir until it is just melted.


Add 2 eggs (lightly whisked) to the veggies. Then add the cream/cheese mixture. Mix well.


Put in a pie plate and bake at 325 for 35-45 minutes.


This is pretty good, though I have to be in the mood for it.
