For dinner tonight I made grilled ground sirloin burgers topped with sauteed mushrooms along with roasted veggies. FYI - when I make roasted veggies, I use anything I can get my hands on and lots of it. This way it last a couple of nights.

The recipe for Dijon vinaigrette is real simple:


I take a mini whisk and stick it in the dijon mustard jar (about 1 tablespoon) and mix it with vinegar of choice - again about 1 to 2 tablespoons (some of my favorites are champagne vinegar or white balsamic vinegar) and then whisk in the olive oil (1/4 cup)- season with salt & pepper.

Well...my two teen boys had pizza. I, however, (restarting P1) am having a big salad with grilled chicken in it, LF cheddar cheese and walnuts. And to give it a big KICK..sprinkled liberally with red pepper flakes. Yowsa!!! I guess that's another way to make sure I drink my water! :)

I just had.... eh hem.....

Chicken chili with dark red beans

1 cup stewed squash

1oz cheddar 2% cheese

Sugar free Kool Aid

And I'll have a chocolate ricotta creme later. Hey, I actually like those things! lol

I had monteray chicken...phase 2-3...chicken breast sauteed in olive oil topped with 1 tablespoon bar b que sauce, monteray jack cheese, and lean microwaved bacon. Side dish of mashed cauliflower and squash.

I could only eat half of the chicken!

oh and had p1 dinner cold fajitas (chicken / steak only) leftover from lunch. and ate it in the car on the way home from work. ahhh, the single life :-).
