I'm new to the board, new to the beach. Today makes 1 full week and I'm doing really well, I think. I have a few questions - Since phase one allows 10 cherry tomatos per meal, I made chilli using very lean beef, kidney beans and crushed tomatos. Is this ok with the beach? I top it off with low fat shredded cheddar and it's very filling. It feels like cheating though.

I thought I would hate the ricotta dessert and find myself loving it! Using vanilla, it tastes just like cannoli filling!

I've been browsing the discussion boards and have gotten a lot of good ideas and support. Now, I'm an official member :)

Thank you so much for the good news about the chili. In that case, I have successfully completed one full week on the beach!

To make the ricotta that tastes like the filling for cannolli, I just followed the recipe in the book - take the ricotta, add splenda and vanilla extract. It truly is good and very satisfying. That's how they make cannolli filling - just ricotta, sugar and vanilla. Of course, no wrap around cake :)

I also made a fabulous chicken yesterday - I took an oven stuffer roaster from perdue, make a bouquet garni of thyme, rosemary and parsley. Stuff 1/2 lemon, 1/2 head of garlic, peeled and smashed and the garni and stuff it into the cavity. Chop up the fresh thyme, rosemary, parsley add olive oil and rub it all over the chicken. Bake according to directions. I had the breast of the chicken and poured some of the drippings over it. It was spectacular.

Welcome to the board! Those chicken and cannoli ideas sound yummy, please post down in our recipe section often :-)

Sounds like you're doing great so far, and Susan's right...once you get past the first phase, it stops feeling like a diet and just starts feeling good!

Yum - I can smell that chicken from here ! I don't usually roast a whole chicken - maybe I should start, using this recipe....
