What is the significance of sugar alcohols and how many are acceptable in something I eat? How do they differ from sugar itself? I have seen people post about this and figured it was probably significant.

There has been some implication in the build up of polyols in lens cells (eye) that contribut to blindness in diabetes patients, so although polyols are safe on this diet, don't overdo it.
